Before I went on vacation, I attempted to make a salad similar to the yummy salad at Bottleworks. The dressing isn't quite as good, since it isn't their exact recipe. However, I think it was a pretty good substitute.
For the salad, I used field greens, baby tomatoes, crumbled goat cheese, sliced almonds, and croutons. The dressing recipe is below. It's super easy to make.
Vanilla Vinaigrette
Serves 4 (2 T servings)
1/3 cup olive oil
3 T white wine vinegar
1 tsp. vanilla extract
1 stp. tarragon leaves
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. sugar
Combine all ingredients and shake well.
About 166 calories per serving and 18 grams of fat.
Yes - definitely not a low cal/low fat dressing. It's the olive oil. However, they say you need some olive oil and good fats everyday. So, this dressing could be your "good fat" of the day.
